Instructions

  1. Chop 8 oz semi-sweet chocolate finely. In a heatproof bowl, combine chocolate, 1/4 cup heavy cream, and 2 tbsp softened unsalted butter. Melt gently over a double boiler or microwave in 20-second intervals, stirring between each, about 5 minutes. Stir in 1 tsp vanilla extract and a pinch of salt until smooth.
  2. Pour the fudgy mixture into a shallow dish, cover with plastic wrap pressed on the surface, and refrigerate for at least 2 hours until firm.
  3. Scoop about 1 tablespoon of the chilled fudgy center and roll into an oval football shape. Place on a parchment-lined baking sheet. Repeat with remaining mixture. Refrigerate for 10 minutes if chocolate softens while shaping.
  4. Finely chop 10 oz dark or semi-sweet chocolate. Melt with 1 tbsp coconut oil over double boiler or microwave until smooth and glossy, about 5 minutes.
  5. Dip each fudgy football into the melted chocolate coating using a fork or dipping tool, letting excess drip off. Place back on parchment paper. Work quickly to avoid fingerprints and achieve a thin, even shell.
