Delicious Bacon Grilled Cheese with Caramelized Onion

This grilled cheese recipe combines crispy bacon, sweet caramelized onions, and gooey melted cheese for the ultimate comfort food experience.

Ingredients

  • 4 slices of sourdough, thick-cut white bread, or ciabatta
  • Unsalted butter, softened
  • 6 strips of thick-cut bacon, cooked until crispy
  • 1 large yellow onion, thinly sliced
  • 4 slices of sharp cheddar cheese (or a mix of cheddar and Gruyère)
  • 1 tablespoon olive oil
  • Pinch of salt
  • Optional: Fresh thyme or hot sauce

Instructions

  1. Heat a skillet over medium heat and cook the bacon until crispy, about 6-8 minutes. Remove and drain on paper towels.
  2. In the same skillet, add olive oil and sliced onions. Sprinkle with a pinch of salt and cook over medium-low heat for 15-20 minutes, stirring occasionally, until golden and soft.
  3. Spread softened butter evenly on one side of each slice of bread.
  4. Layer the cheddar cheese, caramelized onions, crispy bacon, and another slice of cheese between two slices of bread, buttered sides facing out.
  5. Heat the skillet over medium heat. Place the sandwich into the pan and cook for 3-4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese is melted.
  6. Slice the grilled cheese in half and serve immediately.

Notes

For extra flavor, add a touch of Dijon mustard to the bread before layering the ingredients. Cover the skillet with a lid for the last minute to help the cheese melt faster.
