Ingredients

Scale
  • 1 cup (227 g) unsalted butter, melted
  • 2 cups (400 g) granulated sugar
  • 3 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/4 cup (60 ml) Irish cream liqueur (e.g., Bailey’s)
  • 1 cup (125 g) all-purpose flour
  • 3/4 cup (65 g) unsweetened cocoa powder (preferably Dutch-processed)
  • 1/2 teaspoon salt
  • 1 cup (170 g) semisweet chocolate chips
  • 1/4 cup (60 ml) heavy cream
  • 2 tablespoons powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or grease it lightly.
  2. Melt the butter in a microwave-safe bowl until fully liquid, about 1-2 minutes. Let it cool slightly.
  3. In a large bowl, whisk together granulated sugar and eggs until pale and slightly fluffy, about 2-3 minutes.
  4. Stir in the melted butter, vanilla extract, and Irish cream liqueur until combined.
  5. Sift together the flour, cocoa powder, and salt in a separate bowl.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula. Fold in the semisweet chocolate chips last.
  7. In a small saucepan over low heat, combine semisweet chocolate chips and heavy cream. Stir until smooth and glossy. Cool slightly.
  8. Pour half the brownie batter into the prepared pan and spread evenly. Drizzle half of the fudge mixture over the batter.
  9. Spoon the remaining brownie batter over the fudge layer.
  10. Drizzle the remaining fudge on top. Use a toothpick or skewer to swirl the fudge through the batter in a figure-eight motion.
  11. Bake for 30-35 minutes. Check doneness at 30 minutes with a toothpick; it should come out with a few moist crumbs but no wet batter.
  12. Cool the brownies completely in the pan on a wire rack for at least 1 hour before slicing.
  13. Optionally, dust with powdered sugar just before serving.

Notes

Do not overmix the batter to keep brownies fudgy. Check doneness at 30 minutes to avoid overbaking. Cool completely before slicing for best texture. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free or vegan versions, substitute ingredients as suggested. Warm fudge swirl gently if too thick to swirl easily.
