  • 1 block of firm tofu, drained and pressed
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons neutral oil for frying (like avocado or vegetable oil)
  • 1 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. Press the tofu: Remove the tofu from its packaging and drain the water. Wrap it in a clean kitchen towel or paper towels, then place something heavy on top to press out excess moisture. Let it press for about 15 minutes.
  2. Cube the tofu: Once pressed, slice the tofu into bite-sized cubes. Try to keep them evenly sized for even cooking.
  3. Season and coat: In a mixing bowl, combine the cornstarch, garlic powder, onion powder, smoked paprika, salt, and pepper. Gently toss the tofu cubes in the mixture until they’re evenly coated.
  4. Cook the tofu: Heat the oil in a non-stick skillet over medium heat. Add the tofu cubes in a single layer and cook for 3-4 minutes on each side, or until golden brown and crispy. Remove and set aside.
  5. Prepare the sauce: In another bowl, whisk together the Greek yogurt, olive oil, lemon juice, minced garlic, parsley, chives, salt, and pepper until smooth. Taste and adjust seasoning as needed.
  6. Combine: Once the tofu has cooled slightly, pour the creamy herb sauce over the crispy cubes and gently toss to coat. Serve immediately while the tofu is still warm and crispy.

Notes

Take your time pressing the tofu to remove as much moisture as possible for a crispy texture. Make the sauce fresh before serving to preserve the flavor of the herbs.
