  • Egg roll wrappers
  • 1 pound (450g) lean ground beef
  • 1 cup (150g) black beans, drained and rinsed
  • 1 cup (150g) corn kernels
  • 1 cup (120g) shredded cheddar cheese
  • 1 cup (150g) diced red bell pepper
  • 2 tablespoons taco seasoning
  • 2 ripe avocados
  • 2 tablespoons lime juice
  • ½ cup (120g) sour cream
  • ¼ cup (15g) chopped fresh cilantro

Instructions

  1. Heat a large skillet over medium heat and add 1 tablespoon of oil. Add ground beef, cooking until browned and crumbled, about 5-7 minutes. Drain excess fat and set aside.
  2. In the same skillet, sauté diced red bell pepper for 3 minutes until softened. Add corn kernels, black beans, and taco seasoning. Cook for an additional 2 minutes. Remove from heat and allow the mixture to cool slightly.
  3. In a mixing bowl, combine the cooled beef mixture with shredded cheddar cheese. Mix well to evenly distribute the ingredients.
  4. Lay out an egg roll wrapper on a clean surface. Place about 2 tablespoons of the filling near one corner of the wrapper. Fold the corner over the filling, then fold the sides inward. Roll tightly and seal the edge with a bit of water. Repeat until all wrappers are filled.
  5. Heat about 2 inches of oil in a deep pot or fryer to 350°F (175°C). Fry the egg rolls in batches for 3-4 minutes, turning occasionally, until golden brown and crispy.
  6. Remove the egg rolls with a slotted spoon and drain on paper towels.
  7. For the avocado sauce, mash avocados in a bowl. Stir in lime juice, sour cream, and chopped fresh cilantro. Blend until smooth.
  8. Serve the egg rolls warm with avocado sauce for dipping.
