Golden-brown stuffed mushrooms bursting with creamy spinach filling, perfect for parties and gatherings.

Ingredients

  • White button mushrooms (medium-to-large, sturdy caps)
  • Fresh spinach, washed and roughly chopped
  • Cream cheese, softened
  • Parmesan cheese, freshly grated
  • Garlic, minced or grated
  • Olive oil
  • Breadcrumbs (Panko or gluten-free)
  • Salt
  • Pepper
  • Optional: Crushed red pepper flakes or fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Clean the mushrooms by gently wiping them with a damp paper towel. Remove the stems and set the caps aside. Chop the stems finely.
  3. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Sauté the minced mushroom stems and garlic until fragrant, about 2-3 minutes.
  4. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let the mixture cool slightly.
  5. In a mixing bowl, combine the cooked spinach mixture, cream cheese, Parmesan cheese, and season with salt and pepper. Mix until smooth and creamy.
  6. Using a small spoon, fill each mushroom cap with the spinach mixture, slightly mounding the filling.
  7. In a separate bowl, mix the breadcrumbs with 1 tablespoon of olive oil. Sprinkle a thin layer of breadcrumbs over each stuffed mushroom.
  8. Arrange the stuffed mushrooms on the prepared baking sheet and bake for 20-25 minutes, or until the breadcrumbs are golden and crispy.
  9. Remove from the oven and let cool for a few minutes before serving. Garnish with fresh parsley if desired.

Notes

Prepare the filling and mushroom caps ahead of time for convenience. Use parchment paper for easy cleanup. Customize the filling with different cheeses or spices for unique flavors.
