A quick and easy healthy side dish featuring tender roasted asparagus paired with crunchy, cheesy Parmesan crisps. Perfect for busy weeknights or special occasions.

  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt (sea salt preferred)
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • ½ cup Parmesan cheese (about 50g), finely grated
  • Zest from ½ a lemon (optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and allow it to fully heat for at least 10 minutes.
  2. Trim the asparagus by bending each spear until it snaps at its natural breaking point to remove tough ends.
  3. Place trimmed asparagus in a mixing bowl and toss with olive oil, salt, pepper, and garlic powder if using, ensuring even coating.
  4. Arrange asparagus in a single layer on a prepared baking sheet lined with parchment paper or a silicone baking mat.
  5. Roast asparagus for 10 minutes, flipping gently with tongs or a spatula at the 5-minute mark for even browning. The asparagus should be tender but still slightly firm.
  6. Remove the baking sheet from the oven and evenly sprinkle grated Parmesan cheese over the asparagus in a thin layer.
  7. Return the baking sheet to the oven and roast for an additional 5 minutes, watching carefully until the cheese melts and turns golden brown but does not burn.
  8. Optionally, zest half a lemon over the asparagus once out of the oven for a fresh finish.
  9. Serve immediately to enjoy the Parmesan crisps at their crunchiest.

Notes

Do not overcrowd the pan to avoid steaming the asparagus. Use finely grated Parmesan for best crispness. Watch the cheese carefully to prevent burning. If asparagus spears are thick, add 2-3 minutes to the initial roasting time. For reheating leftovers, use a 350°F oven for 5-7 minutes to regain crispness; avoid microwaving.
