  • 2 large eggs, beaten, room temperature
  • 1 ½ cups panko breadcrumbs
  • Cooking spray or a few tablespoons of olive oil
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper and place a wire rack on top.
  2. Slice the onions into ¼-inch thick rings and gently separate them. Set aside.
  3. Prepare dredging stations: mix flour, smoked paprika, garlic powder, ½ teaspoon salt, and black pepper in one bowl; beat eggs in a second bowl; place panko breadcrumbs in a third bowl.
  4. Dredge each onion ring in the flour mixture, shake off excess, dip into beaten eggs, then coat evenly with panko breadcrumbs. Place coated rings on the wire rack.
  5. Spray or brush the onion rings lightly with cooking spray or olive oil.
  6. Bake for 15 minutes, then flip each ring, spray again lightly with oil, and bake for another 10-15 minutes until golden brown and crispy.
  7. While baking, whisk together mayonnaise, ketchup, hot sauce, Worcestershire sauce, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper to make the comeback sauce. Chill until serving.
  8. Serve hot with the tangy comeback sauce on the side.

Pat onions dry before coating to avoid sogginess. Do not overcrowd the wire rack to ensure crispiness. Spray oil before and after flipping for a golden finish. The comeback sauce flavors deepen after a day in the fridge. For gluten-free, substitute flour and panko with gluten-free alternatives. For vegan, use flax egg and vegan mayo.
