  • 1 tablespoon extra virgin olive oil
  • ¼ teaspoon garlic powder (optional)

Instructions

  1. Pat the pork belly cubes dry with paper towels to ensure crispiness. Place them in a mixing bowl.
  2. Add chopped rosemary, sea salt, black pepper, olive oil, and garlic powder (if using) to the bowl. Toss until every piece is evenly coated. Let sit for 10 minutes to let flavors meld.
  3. Heat a heavy skillet or cast iron pan over medium heat for about 3 minutes until hot but not smoking.
  4. Add pork cubes in a single layer without overcrowding the pan. Cook in batches if needed. Let them sizzle undisturbed for about 5 minutes until the bottom is golden and crispy.
  5. Use tongs to flip the pork bites and cook each side for about 4-5 minutes. Total cook time should be around 15-20 minutes until fat renders and bites are crispy.
  6. Check doneness: pork should be golden brown all over with a slightly caramelized crust and reach an internal temperature of 145°F (63°C).
  7. Remove bites to a paper towel-lined plate to drain excess fat. Sprinkle additional sea salt while still warm before serving.
