  • 8 oz (225 g) shredded sharp Cheddar cheese
  • 2 oz (55 g) Parmesan cheese, freshly grated (optional)
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • Black pepper to taste, freshly cracked
  • Pinch of chili flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  3. In a mixing bowl, combine shredded Cheddar and Parmesan cheeses. Toss with smoked paprika, garlic powder, black pepper, and chili flakes if using until evenly coated.
  4. Drop spoonfuls (about 1 tablespoon or 15 g each) of the cheese mixture onto the baking sheet, spacing them about 2 inches apart. Flatten each mound into a thin circle about 2-3 inches in diameter.
  5. Bake for 6-8 minutes until golden with crispy edges but not burnt. The centers may be slightly soft but will harden as they cool.
  6. Remove from oven and let cool completely on the baking sheet for about 10 minutes to crisp up.
  7. Use a spatula to carefully lift the crisps off the parchment. Store in an airtight container or enjoy immediately.

Notes

Use freshly shredded cheese for best melting and crisping. Avoid overcrowding the baking sheet to allow even spreading and crisping. Watch the oven closely near the end to prevent burning. Let crisps cool completely to firm up. For variations, try different cheeses or add herbs and spices. Store crisps in an airtight container at room temperature for up to 3 days or freeze for longer storage.
