  • 2 large eggs, beaten
  • 1/2 cup hot sauce (e.g., Frank’s RedHot)
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Wash and thoroughly dry the cauliflower head. Cut into evenly sized bite-sized florets, about 1.5 inches each.
  3. In a mixing bowl, whisk together almond flour, grated Parmesan, garlic powder, smoked paprika, salt, and black pepper.
  4. In a separate bowl, beat the eggs until smooth.
  5. Dip each cauliflower floret into the beaten eggs, letting excess drip off, then roll in the almond flour mixture to coat evenly.
  6. Place the coated florets on the lined baking sheet, spacing about 1 inch apart.
  7. Bake for 20 minutes, flipping each piece halfway through to ensure even browning.
  8. While baking, melt the butter in a small saucepan over low heat and stir in the hot sauce until combined.
  9. Remove cauliflower from oven and immediately toss in the buffalo sauce until well coated.
  10. Return coated bites to the baking sheet and bake for an additional 5 minutes at 425°F (220°C) to set the sauce.
  11. Remove from oven, garnish with fresh parsley or chives if desired, and serve warm with ranch or blue cheese dressing.

Ensure cauliflower is completely dry before coating to avoid sogginess. Space florets well on the baking sheet to maintain crispiness.
