  • 1 tablespoon olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper (optional)
  • Toothpicks (for securing bacon)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if using.
  2. Cut chicken breast into 1-inch chunks, keeping pieces uniform for even cooking.
  3. In a large mixing bowl, toss chicken pieces with olive oil, garlic powder, smoked paprika, onion powder, salt, black pepper, and cayenne pepper if using.
  4. Wrap each chicken piece with one slice of bacon, securing with a toothpick if needed.
  5. Arrange bacon-wrapped chicken bites on the wire rack, spacing them apart for air circulation.
  6. Bake for 25–30 minutes, flipping each bite halfway through to ensure even crisping.
  7. Check that chicken reaches an internal temperature of 165°F (74°C).
  8. Let bites rest for 5 minutes before serving.
