  • 810 slices bacon, thin to medium thickness
  • 1 tablespoon extra virgin olive oil
  • 1/2 teaspoon garlic powder (optional)
  • 1/4 teaspoon freshly cracked black pepper
  • Pinch of sea salt
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Prepare a baking sheet with parchment paper or a silicone baking mat.
  2. Trim the asparagus stalks by snapping off the woody ends, about 1 to 2 inches from the bottom.
  3. Group the asparagus into bundles of 3-4 stalks, ensuring even size for uniform cooking.
  4. Wrap each bundle tightly with one slice of bacon from the bottom up. Cut bacon in half if slices are very long.
  5. Place the bundles seam side down on the prepared baking sheet.
  6. Brush or drizzle the bundles lightly with olive oil, then sprinkle garlic powder, smoked paprika (if using), black pepper, and a pinch of salt.
  7. Bake for 20-25 minutes. Halfway through (around 12 minutes), use tongs to turn each bundle for even crisping.
  8. Check doneness: bacon should be crispy and golden brown; asparagus tender but still firm when pierced with a fork.
  9. Remove from oven and let cool for 2-3 minutes before serving.

Notes

If bacon slices are thick-cut, they will take slightly longer to crisp. Avoid overcrowding the baking sheet to prevent soggy bacon. Turning bundles halfway through baking ensures even crisping. Fresh asparagus is preferred over frozen for best texture. Let bundles rest a few minutes after baking to firm up bacon. For a cheesy variation, add shredded Parmesan or mozzarella during the last 5 minutes of baking.
