  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika or smoked paprika
  • 1/4 teaspoon dried herbs like rosemary or thyme
  • Water (for soaking fries)

Instructions

  1. Wash and peel russet potatoes if desired. Cut into even sticks about 1/4 to 1/2 inch thick (6-12 mm).
  2. Place cut fries in a large bowl of cold water and soak for at least 30 minutes, up to 2 hours.
  3. Drain and pat fries completely dry with clean kitchen towels or paper towels.
  4. Return fries to a dry bowl, drizzle with 1-2 tablespoons olive oil, and sprinkle with salt, pepper, and any optional seasonings. Toss gently to coat evenly.
  5. Preheat air fryer to 380°F (193°C) for about 3 minutes.
  6. Place fries in the air fryer basket in a single layer without overcrowding. Cook for 12-15 minutes, shaking or tossing halfway through.
  7. Check for golden crispiness; cook an additional 2-3 minutes if needed, watching carefully to avoid burning.
  8. Serve immediately, optionally sprinkling with extra salt.

Soaking the cut potatoes removes excess starch for crispiness. Dry fries thoroughly before air frying to avoid sogginess.
