These crispy firecracker bacon-wrapped jalapeño poppers are a perfect party appetizer combining smoky bacon crunch, creamy cheesy filling, and just the right amount of heat.

  • 12 medium-sized fresh jalapeños
  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, finely shredded
  • 12 strips thin-cut bacon
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 1 tablespoon brown sugar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. Wear gloves and slice jalapeños in half lengthwise. Scoop out seeds and membranes to adjust heat level. Pat dry with paper towel.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, smoked paprika, salt, and black pepper until smooth.
  4. Fill each jalapeño half with the cheese mixture, packing firmly but not overflowing.
  5. Wrap each filled jalapeño half with a strip of bacon, spiraling tightly and securing the end underneath. Use toothpicks if needed.
  6. Optionally, sprinkle brown sugar lightly on top of each bacon-wrapped popper.
  7. Bake for 20-25 minutes until bacon is crispy and cheese is bubbling. For extra crispiness, broil for 1-2 minutes watching carefully.
  8. Remove from oven and let rest for 5 minutes before serving.

Notes

Wear gloves when handling jalapeños to avoid skin irritation. Use a wire rack for crispier bacon and avoid overcrowding the baking sheet. Adjust heat by removing seeds or using milder peppers. Broil briefly at the end for extra crispiness but watch closely to prevent burning. Leftovers can be stored in the fridge for up to 3 days and reheated in the oven.
