Instructions

  1. Peel and slice peaches into 1/4 inch thick slices. Toss with 1/2 cup granulated sugar, lemon juice, and cinnamon if using. Let macerate for 10-15 minutes.
  2. Optional: Cook peach mixture in a skillet over medium heat for 5 minutes, stirring occasionally. Let cool slightly.
  3. Preheat oven to 375°F (190°C). Brown the butter in a medium saucepan over medium heat, stirring constantly until golden brown and nutty, about 5 minutes. Remove from heat immediately.
  4. In a large bowl, whisk together flour, brown sugar, salt, and baking powder. Slowly add browned butter, milk, and vanilla extract. Stir until just combined; batter will be thick but pourable.
  5. Pour peach filling evenly into a 9-inch baking dish. Spoon dollops of the brown butter batter over the peaches, leaving space between dollops.
  6. Bake for 30-35 minutes until topping is golden brown and crisp and peach filling is bubbly.
  7. Let cool for 10 minutes before serving. Serve warm with vanilla ice cream.
