  • 1 to 1 1/2 cups (3.5 to 5.3 oz or 100-150g) shredded cheese (mozzarella and sharp cheddar blend)
  • Handful of fresh cilantro, chopped
  • Optional: Thinly sliced red onion
  • Olive oil (for brushing edges)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven to heat up.
  2. In a mixing bowl, toss 2 cups (300g) of shredded cooked chicken with 1/2 cup (120ml) BBQ sauce until evenly coated. Season lightly with salt and pepper. Set aside.
  3. Place your naan or flatbread on a baking sheet or preheated pizza stone. Brush lightly with olive oil around the edges to promote crisping.
  4. Sprinkle about 1/2 to 3/4 cup (50-75g) mozzarella cheese evenly over the flatbread, leaving a small border at the edges.
  5. Evenly distribute the sauced chicken over the cheese layer, avoiding overloading to keep the flatbread crispy.
  6. Sprinkle the remaining 1/2 cup (50-75g) cheese over the chicken to create a double cheese layer.
  7. Add optional thin slices of red onion if desired.
  8. Bake the flatbread in the oven for 10-12 minutes, or until the cheese is melted, bubbly, and the edges are golden and crisp.
  9. Remove from the oven and immediately sprinkle with chopped fresh cilantro.
  10. Slice with a pizza cutter or sharp knife and serve warm.

Do not overload the flatbread with chicken or sauce to avoid sogginess. Use room temperature chicken for best crispiness. Brushing edges with olive oil helps crisp the crust.
