  • 4 oz (113 g) cream cheese, softened
  • 1 cup (about 100 g) shredded mozzarella cheese
  • 1 cup fresh spinach, chopped
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • 1 tablespoon olive oil
  • Fresh herbs (optional, such as parsley or thyme) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place each chicken breast between two sheets of plastic wrap or in a zip-top bag and gently pound with a meat mallet or rolling pin until about 1/2 inch (1.3 cm) thick and even.
  3. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine softened cream cheese, shredded mozzarella, sautéed spinach, salt, pepper, and smoked paprika. Stir until well blended.
  5. Lay the pounded chicken breast flat. Spoon a generous amount of the filling along one edge, then carefully roll the chicken up tightly, tucking in the filling.
  6. Wrap 2 to 3 strips of bacon around each rolled chicken breast, overlapping slightly to cover completely. Secure with toothpicks if needed.
  7. Place the bacon-wrapped chicken seam side down on a baking sheet or oven-safe skillet.
  8. Bake for 25-30 minutes until bacon is crispy and chicken reaches an internal temperature of 165°F (74°C). If bacon crisps too quickly, loosely cover with foil to prevent burning.
  9. Let the chicken rest for 5 minutes before slicing and serving.

Use thick-cut bacon for better crispiness and sturdiness. Secure bacon with toothpicks to prevent unraveling. If bacon browns too fast, tent with foil.
