  • 3 medium jalapeños, deseeded if preferred
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese (about 50 g)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • Salt and pepper to taste
  • Toothpicks for securing bacon wraps

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top if available.
  2. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth.
  3. Cut each jalapeño in half lengthwise, remove seeds and membranes if less heat is desired, then dice finely.
  4. Mix diced jalapeños into the cheese mixture until evenly combined.
  5. Cut chicken breasts into roughly 1-inch bite-sized cubes.
  6. Spread a small spoonful of the jalapeño popper filling onto each chicken piece.
  7. Cut each bacon strip in half. Wrap each chicken bite with a half strip of bacon, securing with a toothpick if needed.
  8. Place bacon-wrapped bites seam side down on the wire rack.
  9. Bake for 25–30 minutes until bacon is crispy and chicken reaches an internal temperature of 165°F (74°C). Broil 1-2 minutes if bacon needs extra crispiness, watching carefully.
  10. Remove from oven and let rest for 5 minutes before serving.

Notes

Use a wire rack to ensure bacon crisps evenly and fat drips away. If bacon shrinks too much, wrap tighter or use thinner slices. Watch oven temperature to avoid burning bacon. Room temperature cream cheese blends better. For dairy-free, substitute cream cheese and cheddar with coconut-based and dairy-free cheese alternatives. Air fryer option: cook at 375°F (190°C) for 15 minutes, turning halfway.
