  • 2 pounds chicken wings, split into drumettes and flats (skin-on for best crisp)
  • 1 tablespoon baking powder (aluminum-free)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • For the Buffalo Sauce:
  • 1/4 cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon honey
  • For the Honey Garlic Sauce:
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon apple cider vinegar
  • For the BBQ Sauce:
  • 1/3 cup BBQ sauce
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika

Instructions

  1. Pat the 2 pounds of chicken wings dry with paper towels.
  2. Toss wings in a large bowl with 1 tablespoon baking powder, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 1 teaspoon garlic powder until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  4. Place wings in a single layer in the air fryer basket, avoiding overcrowding. Cook in batches if necessary.
  5. Air fry wings at 400°F (200°C) for 20-22 minutes, shaking or turning halfway through (around 10-11 minutes). Wings should be golden brown and crispy. Check for an internal temperature of 165°F (74°C).
  6. While wings cook, prepare sauces in separate bowls: Buffalo (hot sauce, melted butter, honey), Honey Garlic (honey, minced garlic, soy sauce, apple cider vinegar), BBQ (BBQ sauce, apple cider vinegar, smoked paprika).
  7. Divide cooked wings into three portions and toss each with one of the prepared sauces until well-coated.
  8. Serve wings immediately hot. Optionally garnish with chopped green onions or sesame seeds.
  9. Optional: For extra crispy wings, air fry plain wings first, toss in sauce, then air fry again for 2-3 minutes at 390°F (200°C).
