A quick and easy recipe for crispy, cheesy chicken quesadillas made in the air fryer, perfect for weeknight dinners or snacks with minimal mess and maximum flavor.

  • 4 large flour tortillas
  • 1½ cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
  • 2 tablespoons fresh cilantro, chopped (optional)
  • Cooking spray or a light brush of oil (optional)
  • Optional extras: 1 avocado, sliced; sour cream or Greek yogurt; fresh lime wedges

Instructions

  1. Prepare the Chicken Filling (10 minutes): In a medium mixing bowl, combine shredded chicken with smoked paprika, chili powder, ground cumin, garlic powder, onion powder, salt, and pepper. Add salsa or hot sauce if using. Mix well until evenly coated. Adjust seasoning as needed.
  2. Preheat the Air Fryer (3 minutes): Set air fryer to 375°F (190°C) and preheat while assembling quesadillas.
  3. Assemble the Quesadillas (5 minutes): Lay one flour tortilla on a clean surface. Sprinkle about ⅓ cup shredded cheese evenly over half the tortilla. Spread ½ cup of chicken filling on top of the cheese. Add cilantro if using, then top with another ⅓ cup cheese. Fold tortilla over to create a half-moon shape. Repeat for remaining tortillas.
  4. Prepare for Air Frying (1 minute): Lightly spray both sides of each quesadilla with cooking spray or brush with oil (optional).
  5. Cook in the Air Fryer (8-10 minutes): Place one or two quesadillas in the basket. Cook at 375°F for 4-5 minutes on one side. Flip carefully and cook another 4-5 minutes until golden brown and cheese is melted.
  6. Rest and Serve (2 minutes): Remove quesadillas and let rest for 1-2 minutes before slicing into wedges.
