  • 1 pound large shrimp, peeled and deveined (tail-on or off, your choice)
  • 1 cup panko breadcrumbs (recommend Kikkoman for best crunch)
  • ½ cup all-purpose flour (or almond flour for gluten-free)
  • 2 large eggs, beaten, room temperature
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Cooking spray (preferably avocado oil spray)
  • ½ cup sweet chili sauce (homemade preferred)
  • 2 tablespoons mayonnaise (use vegan mayo if preferred)
  • 1 tablespoon Sriracha sauce (adjust to taste)
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • Optional garnishes: chopped green onions, sesame seeds, lime wedges

Instructions

  1. Rinse and pat dry 1 pound of large shrimp thoroughly.
  2. In a shallow bowl, combine 1 cup panko breadcrumbs, ½ cup all-purpose flour, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, ½ teaspoon salt, and ½ teaspoon black pepper.
  3. Beat 2 large eggs in another bowl until smooth.
  4. Dip each shrimp into the beaten eggs, then coat thoroughly with the breadcrumb mixture. Press lightly to ensure breadcrumbs stick. Place coated shrimp on a plate or wire rack.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Spray the air fryer basket lightly with cooking spray. Place shrimp in a single layer without overcrowding. Spray shrimp lightly on top with cooking spray.
  7. Air fry shrimp for 7-9 minutes, flipping halfway through, until golden brown and crispy.
  8. While shrimp cooks, whisk together ½ cup sweet chili sauce, 2 tablespoons mayonnaise, 1 tablespoon Sriracha, 1 teaspoon honey, and 1 teaspoon rice vinegar in a small bowl.
  9. Once shrimp are done, immediately toss them in the sauce to coat evenly.
  10. Garnish with chopped green onions, sesame seeds, and lime wedges if desired.

Notes

Pat shrimp dry thoroughly to ensure crispiness. Preheat the air fryer for best results. Cook shrimp in batches to avoid overcrowding. Toss shrimp in sauce immediately after cooking to keep them crispy. For gluten-free, substitute all-purpose flour and panko with almond flour and gluten-free panko breadcrumbs. If shrimp aren’t crispy enough, add 1-2 extra minutes in the air fryer but watch closely to avoid drying out.
