A quick and elegant appetizer featuring whipped ricotta cheese topped with honey and toasted walnuts on toasted baguette slices. Perfect for entertaining or a satisfying snack.

  • 2 tablespoons heavy cream (30 ml)
  • 2 tablespoons honey (40 g), plus extra for drizzling
  • 1/4 cup toasted walnuts, roughly chopped
  • 1 baguette or rustic bread, sliced into 1/2-inch thick pieces
  • Extra virgin olive oil, for brushing bread
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Fresh thyme or rosemary leaves (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Slice the baguette into 1/2-inch thick pieces.
  2. Lightly brush each bread slice with extra virgin olive oil and place on a baking sheet.
  3. Toast the bread in the oven for 8-10 minutes until golden and crisp, watching closely to avoid burning.
  4. While bread toasts, heat a dry skillet over medium heat. Add walnuts and toast for 3-5 minutes, stirring frequently until fragrant and lightly browned. Remove from heat and roughly chop once cooled.
  5. In a mixing bowl, combine ricotta and heavy cream. Whip with an electric mixer or whisk until smooth, fluffy, and slightly airy, about 2-3 minutes.
  6. Season the whipped ricotta with sea salt and freshly ground black pepper.
  7. Gently fold in 2 tablespoons honey, keeping some streaks visible for visual appeal.
  8. Spread a generous dollop of whipped ricotta onto each toasted bread slice.
  9. Sprinkle toasted walnuts evenly on top of the ricotta.
  10. Optionally, garnish with fresh thyme or rosemary leaves.
  11. Drizzle a little extra honey over the assembled bruschetta before serving.

Notes

Use whole-milk ricotta for best texture. Whip slowly to avoid watery ricotta. Toast walnuts and bread properly for maximum flavor and crunch. Drizzle honey last for aroma and sweetness. Can prepare ricotta mixture up to 2 days ahead and store in airtight container in fridge. Toast bread fresh before serving.
