Creamy Tuscan Chicken with Sun-Dried Tomatoes

A quick and easy creamy Tuscan chicken recipe featuring juicy chicken breasts, sun-dried tomatoes, spinach, and a rich Parmesan cream sauce. Perfect for cozy weeknight dinners or impressing guests.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g), pounded to even thickness
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil preferred)
  • 3 cups fresh baby spinach
  • 1 cup heavy cream (full-fat)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup low sodium chicken broth
  • 1 teaspoon dried Italian seasoning (or mix of oregano, basil, thyme)
  • Salt and freshly cracked black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup white wine (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Place each breast between two sheets of plastic wrap and gently pound to about 1/2-inch thickness. Season both sides generously with salt, pepper, and Italian seasoning.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When hot, add chicken breasts and sear for about 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside on a plate tented with foil to keep warm. Cook in batches if needed.
  3. Lower heat to medium. Add 2 tablespoons butter to the same pan. Once melted, add minced garlic and sauté for 30 seconds until fragrant, being careful not to burn.
  4. Stir in chopped sun-dried tomatoes and cook for about 1 minute to release their flavor.
  5. Pour in 1/2 cup chicken broth and 1/4 cup white wine if using. Scrape up any browned bits from the bottom with a wooden spoon. Let simmer for 2-3 minutes until slightly reduced.
  6. Stir in 1 cup heavy cream and 1/2 cup grated Parmesan cheese. Reduce heat to low and simmer gently for 3-5 minutes, stirring occasionally until the sauce thickens and becomes silky.
  7. Toss in fresh baby spinach and cook until just wilted, about 2 minutes. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes.
  8. Return the cooked chicken breasts to the pan, spooning sauce over the top. Let everything warm together for another 2 minutes so flavors meld.
  9. Transfer chicken to plates, spoon extra sauce and spinach over the top. Garnish with additional Parmesan or fresh basil if desired.

Notes

Keep heat moderate when simmering the cream sauce to avoid curdling. If sauce gets too thick, add a splash of broth or cream to loosen it. Pounding chicken breasts to even thickness ensures even cooking and juiciness. Use sun-dried tomatoes packed in oil for richer flavor. White wine is optional but recommended for depth.
