A creamy, cheesy, and spicy dip combining ground breakfast sausage, spicy Rotel tomatoes, cream cheese, and cheddar. Perfect for parties, game days, and potlucks.

  • 1 pound ground breakfast sausage (mild or spicy)
  • 1 can (10 oz) spicy Rotel diced tomatoes & green chilies
  • 8 oz cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Black pepper to taste
  • Optional: jalapeño or hot sauce to taste

Instructions

  1. Heat a large skillet over medium heat. Add ground breakfast sausage and cook for 7-10 minutes until browned and cooked through. Drain excess grease.
  2. In a mixing bowl, soften cream cheese until smooth. Add shredded cheddar cheese, sour cream, garlic powder, onion powder, and black pepper. Stir until well combined.
  3. Drain Rotel tomatoes slightly and fold into the cheese mixture along with the cooked sausage. Stir gently to combine.
  4. Transfer mixture to a slow cooker on low for 1-2 hours or spread in an oven-safe dish and bake at 350°F for 20-25 minutes until bubbly and melted. Stir halfway through cooking.
  5. Taste and adjust seasoning. Add jalapeños or hot sauce if desired. Let rest for 5 minutes before serving.

Notes

Drain excess grease from sausage to avoid greasy dip. Use room temperature cream cheese for smooth mixing. Drain Rotel to prevent watery dip. Stir occasionally during cooking to prevent burning. Adjust thickness with milk or extra cheese as needed. Garnish with chopped cilantro or green onions if desired.
