Ingredients

Scale
  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) pumpkin puree (not pumpkin pie filling)
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 cup (125g) all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (60g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 1 tsp pure vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper or spray with non-stick spray.
  2. In a large bowl, whisk together the sugar, pumpkin puree, vegetable oil, and eggs until smooth and well combined.
  3. In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. Gradually fold the dry mixture into the wet mixture, stirring until just combined. Be careful not to overmix.
  5. Spread the batter evenly into your prepared pan and smooth the top with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the bars to cool completely in the pan before frosting.
  8. In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, vanilla extract, and salt, and mix until creamy and fluffy.
  9. Spread the cream cheese frosting evenly over the cooled pumpkin bars. Slice into squares and serve.
