A refreshing and creamy cucumber salad with fresh dill, perfect for summer. This easy recipe combines crisp cucumbers with a tangy sour cream and mayo dressing for a classic, crowd-pleasing side dish.

  • 3 medium cucumbers (Persian or English cucumbers preferred)
  • ½ small red onion, thinly sliced
  • 2 tablespoons fresh dill, finely chopped
  • ½ cup (120 ml) sour cream (full-fat preferred, can substitute Greek yogurt)
  • ¼ cup (60 ml) mayonnaise
  • 1 tablespoon (15 ml) apple cider vinegar
  • 1 teaspoon granulated sugar (optional)
  • Salt to taste (preferably kosher salt)
  • Freshly ground black pepper to taste

Instructions

  1. Rinse and peel the cucumbers if desired. Slice them thinly, about 1/8 inch (3 mm) thick.
  2. Thinly slice ½ small red onion into fine strips. Soak in cold water for 5 minutes and drain if you want to reduce sharpness.
  3. In a separate bowl, whisk together sour cream, mayonnaise, apple cider vinegar, sugar, salt, and pepper to taste.
  4. Add the sliced cucumbers, onion, and chopped dill to a large mixing bowl. Pour the dressing over and toss gently to coat evenly.
  5. Cover and refrigerate for at least 30 minutes, ideally 1 hour, to let flavors meld and cucumbers soak up the dressing.
  6. Before serving, stir gently and adjust seasoning with salt, pepper, or a splash more vinegar if needed. Serve chilled.

Notes

To prevent watery salad, lightly salt cucumber slices and let them drain for 10-15 minutes, then pat dry before mixing. Soaking onion slices in cold water reduces sharpness. The salad is best eaten within 24 hours and should be stored in an airtight container in the refrigerator. Re-chill and drain excess liquid before serving leftovers.
