  • 4 boneless, skinless chicken breasts (about 1.5 lbs or 680 g), pounded to even thickness
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (oil-packed, drained, reserve some oil)
  • 1/2 cup chicken broth (preferably low sodium)
  • 1 cup heavy cream
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breasts dry and pound them to an even thickness of about 1/2 inch (1.3 cm). Season both sides generously with salt and pepper.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken and set aside, tented with foil.
  3. Reduce heat to medium and add butter to the same pan. When melted, add minced garlic and sauté for about 30 seconds until fragrant.
  4. Add chopped sun-dried tomatoes and cook for 1-2 minutes, stirring frequently.
  5. Pour in chicken broth and scrape up browned bits from the pan. Let broth reduce by half, about 3-4 minutes.
  6. Lower heat to medium-low and slowly stir in heavy cream and Parmesan cheese. Stir until cheese melts and sauce thickens slightly, about 3-5 minutes. Add red pepper flakes, salt, and pepper to taste.
  7. Stir in chopped fresh basil gently.
  8. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over chicken and warm through for 2 minutes.
  9. Serve hot with sauce spooned generously over the chicken.

Notes

If the sauce becomes too thick, add a splash of chicken broth or cream to loosen it. Avoid overcooking chicken to keep it juicy. Blending sun-dried tomatoes before cooking creates a smoother sauce. Use coconut cream and dairy-free Parmesan alternative for a dairy-free version. Adjust seasoning as sun-dried tomatoes add saltiness. Leftovers keep well refrigerated for 3 days or frozen for up to 2 months.
