  • 4 bone-in pork chops (about 1-inch thick, 68 ounces / 170-225g each)
  • Salt and black pepper to taste, freshly ground
  • 2 tablespoons olive oil
  • 8 ounces cremini mushrooms, sliced (225g)
  • 3 cloves garlic, minced
  • 1/4 cup diced onion (about 40g)
  • 1/2 cup chicken broth (120ml), low sodium preferred
  • 3/4 cup heavy cream (180ml)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon xanthan gum (optional but recommended)
  • 2 tablespoons unsalted butter
  • Fresh parsley, chopped for garnish

Instructions

  1. Pat the pork chops dry with paper towels. Generously season both sides with salt and freshly ground black pepper.
  2. Place a large skillet over medium-high heat and add 2 tablespoons of olive oil. Heat until shimmering but not smoking.
  3. Add the pork chops to the skillet, leaving space between each. Sear for 4-5 minutes on the first side without moving them to build a golden-brown crust. Flip and cook the other side for another 3-4 minutes.
  4. Transfer the pork chops to a warm plate and tent loosely with foil to rest.
  5. In the same skillet, reduce heat to medium. Add butter and diced onion, cooking until softened, about 3 minutes.
  6. Add sliced mushrooms and cook for 5-6 minutes until they release moisture and start browning.
  7. Add minced garlic and cook for 30 seconds until fragrant.
  8. Pour in 1/2 cup chicken broth and scrape up any browned bits from the pan bottom. Let the broth reduce slightly for 2-3 minutes.
  9. Stir in 3/4 cup heavy cream, 1 teaspoon Dijon mustard, and 1/2 teaspoon dried thyme. Sprinkle in xanthan gum if using and whisk quickly to avoid clumps. Simmer gently for 3-4 minutes until the sauce thickens.
  10. Nestle the pork chops back into the sauce. Spoon sauce over the top and cook for another 2-3 minutes to heat through.
  11. Taste the sauce and adjust seasoning with salt and pepper if needed. Sprinkle chopped fresh parsley on top before serving.
