  • 3 cups cooked chicken breast, shredded or chopped (about 450g / 1 lb)
  • 4 cups broccoli florets (fresh or frozen)
  • 8 ounces cream cheese, softened (225g)
  • ½ cup sour cream (120ml)
  • ¼ cup mayonnaise (60ml)
  • 1½ cups shredded sharp cheddar cheese (170g)
  • 1 tablespoon olive oil or butter
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tablespoon olive oil or butter in a skillet over medium heat. Add 4 cups broccoli florets and sauté for 4-5 minutes until bright green and just starting to soften but still crisp. Remove from heat and set aside.
  3. In a medium bowl, combine softened cream cheese, sour cream, mayonnaise, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Stir until smooth and creamy.
  4. Fold in the cooked shredded chicken gently into the sauce mixture.
  5. Gently fold in the sautéed broccoli, ensuring even coating with the sauce.
  6. Transfer the mixture into a 9×13 inch (23×33 cm) oven-safe casserole dish, spreading evenly.
  7. Sprinkle shredded sharp cheddar cheese evenly over the top.
  8. Bake in the preheated oven for 20-25 minutes, until cheese is melted, bubbling, and lightly browned.
  9. Let the casserole rest for about 5 minutes before serving.

Notes

If the sauce is too thick before baking, add a splash of unsweetened almond milk to loosen it without adding carbs. To prevent the top from browning too quickly, cover loosely with foil halfway through baking. Use room temperature cream cheese for a smooth sauce. Sauté broccoli briefly to keep it tender-crisp and avoid mushiness. Variations include swapping chicken for tofu or chickpeas for a vegetarian version, or using dairy-free alternatives for a dairy-free casserole.
