  • 1 pound Italian sausage, casings removed (mild or spicy)
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup water
  • 1 can (28 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley or basil, chopped (optional)
  • Extra Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the Italian sausage and cook, breaking it up into crumbles, until browned—about 5 minutes. Remove any excess grease if necessary.
  2. Add the diced onion and cook until softened, about 3 minutes. Stir in the minced garlic, basil, oregano, and red pepper flakes, cooking for another minute until fragrant.
  3. Pour in the chicken broth, water, crushed tomatoes, and tomato paste. Stir everything together and bring to a gentle boil. Reduce heat and let simmer for 10 minutes to allow the flavors to meld.
  4. While the soup simmers, cook the lasagna noodles in a separate pot according to package instructions. Drain and set aside.
  5. Once the soup base is ready, stir in the heavy cream and Parmesan cheese. Let it simmer for another 5 minutes, stirring occasionally, until the soup is rich and creamy.
  6. Add the cooked lasagna noodles to the soup and stir to combine. Taste and adjust seasoning with salt and pepper if needed.
  7. Finally, sprinkle shredded mozzarella cheese over the top. Cover the pot and let the cheese melt for 2-3 minutes.
  8. Serve hot, garnished with fresh parsley or basil and extra Parmesan cheese if desired.
