  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 4 ounces cream cheese, softened
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)
  • 4 medium zucchinis (about 4 cups spiralized zucchini noodles)
  • 1 tablespoon olive oil or butter
  • Pinch of salt

Instructions

  1. Wash zucchinis and trim the ends. Spiralize them into noodles using a spiralizer or use a vegetable peeler to create ribbons. Set aside.
  2. In a large skillet over medium-high heat, heat 2 tablespoons olive oil. Toss shrimp with garlic powder, salt, and black pepper. Add shrimp in a single layer and cook for 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium. In the same skillet, add butter and minced garlic. Sauté for about 30 seconds until fragrant. Add softened cream cheese, stirring constantly until melted and smooth.
  4. Slowly pour in heavy cream while stirring. Bring to a gentle simmer. Add grated Parmesan cheese and crushed red pepper flakes if using. Stir continuously until sauce thickens slightly, about 3-5 minutes. Adjust seasoning as needed.
  5. In a separate pan, heat 1 tablespoon olive oil over medium heat. Add zucchini noodles, sprinkle with a pinch of salt, and sauté for 2-3 minutes until just tender but still crisp. Drain any excess moisture.
  6. Add cooked shrimp back into the Alfredo sauce and stir gently to coat. Fold in the zoodles and warm together for about 2 minutes.
  7. Remove from heat, garnish with chopped fresh parsley, and serve immediately. Optionally, add a wedge of lemon on the side.

Notes

If the sauce is too thick, stir in a splash of chicken broth or water to loosen. Salt zucchini noodles and let them drain before cooking to reduce moisture and prevent sogginess. Cook shrimp just until opaque to avoid rubbery texture. Use fresh garlic and freshly grated Parmesan for best flavor.
