Creamy Keto Ground Beef Casserole Recipe with Easy Cheese Swirls

  • 1 lb (450g) ground beef (80/20), preferably fresh and grass-fed
  • 8 oz (225g) cream cheese, softened
  • 1 ½ cups (150g) shredded sharp cheddar cheese
  • ½ cup (120ml) sour cream, full-fat recommended
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ cup (25g) chopped green onions (optional but recommended)
  • 1 tsp salt, adjust to taste
  • ½ tsp freshly ground black pepper
  • 1 tbsp olive oil or avocado oil
  • 2 cups (300g) cauliflower rice (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp of olive or avocado oil in a large skillet over medium-high heat. Add 1 lb ground beef and cook for 6-8 minutes, breaking it apart with a spatula until no pink remains and beef is slightly browned.
  3. Season the beef with 1 tsp salt, ½ tsp black pepper, 1 tsp garlic powder, and 1 tsp onion powder. Drain excess fat if needed, then remove from heat.
  4. In a mixing bowl, combine 8 oz softened cream cheese with ½ cup sour cream. Stir until smooth and well blended. Use a quick whisk or microwave for 10 seconds if lumps remain.
  5. Fold 1 ½ cups shredded sharp cheddar cheese and ¼ cup chopped green onions into the cream cheese mixture to create cheese swirls.
  6. Gently fold the browned ground beef into the creamy cheese mixture, keeping some lumps for the swirls.
  7. Optionally, fold in 2 cups cauliflower rice to add texture and bulk.
  8. Transfer the mixture evenly into a prepared 9×13 inch (23×33 cm) oven-safe casserole dish. Smooth the surface but keep texture for cheese swirls.
  9. Bake uncovered for 20-25 minutes until the top is bubbling and golden with browned cheese spots.
  10. Let the casserole rest for 5 minutes before serving to set and make slicing easier.

Notes

Do not over-stir the beef and cheese mixture to keep visible cheese swirls. Brown the beef properly for rich flavor. Soften cream cheese ahead of time to avoid lumps. Optionally add extra shredded cheddar on top during last 5 minutes of baking for a crispier crust. Rest casserole before serving for better texture.
