  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g)
  • 8 slices of bacon, cooked crispy and chopped
  • 8 oz (225 g) cream cheese, softened
  • 1 cup (100 g) shredded cheddar cheese
  • ½ cup (120 ml) sour cream
  • 1 packet ranch seasoning mix (about 1 oz / 28 g)
  • 2 cloves garlic, minced
  • Salt and black pepper to taste (about ½ tsp salt and ¼ tsp pepper)
  • Fresh chives or parsley, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a large skillet over medium heat until crisp, about 8 minutes. Transfer to a paper towel-lined plate to drain. Once cooled, chop into bite-sized pieces. Save a little bacon fat in the pan for cooking chicken if desired.
  3. Season the chicken breasts with salt and pepper on both sides. In the same skillet, sear the chicken over medium-high heat for 3–4 minutes per side until golden brown but not fully cooked. Transfer the seared chicken to an oven-safe baking dish.
  4. In a mixing bowl, combine softened cream cheese, sour cream, ranch seasoning, minced garlic, and shredded cheddar cheese. Mix well until smooth and creamy.
  5. Pour the sauce evenly over the chicken breasts in the baking dish. Sprinkle chopped bacon over the top, reserving a small handful for garnish.
  6. Bake for 25–30 minutes until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbly and golden around the edges.
  7. Remove from oven and sprinkle with reserved bacon and chopped fresh chives or parsley. Let rest for 5 minutes before serving.

Notes

Use full-fat cream cheese and sour cream for best texture and flavor. Sear chicken before baking to lock in juices and avoid dryness. If sauce is too thick before baking, stir in a tablespoon of heavy cream or chicken broth. Avoid overbaking to keep chicken juicy. Can be made in a slow cooker by browning chicken and bacon first, then cooking on low for 3–4 hours, adding cheese in the last 30 minutes. For dairy-free version, substitute cream cheese and sour cream with coconut cream and coconut yogurt and use dairy-free cheese alternatives.
