  • 2 tbsp olive oil or avocado oil (for searing)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz cremini or white mushrooms, sliced
  • 1 cup beef broth (low-sodium recommended)
  • 1 tbsp Dijon mustard
  • 1 cup sour cream, full-fat
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 medium head cauliflower (about 4 cups riced) or pre-riced cauliflower
  • 2 tbsp unsalted butter or ghee
  • 2 cloves garlic, minced
  • Salt and pepper, to taste
  • Fresh chives or parsley, finely chopped (optional)

Instructions

  1. Rice the cauliflower by removing leaves and core, chopping into chunks, and pulsing in a food processor until it resembles rice grains. Alternatively, grate on the largest holes of a box grater. Set aside.
  2. Thinly slice the beef against the grain into 1/4-inch thick strips. Pat dry with paper towels and season lightly with salt and pepper.
  3. Heat 1 tablespoon of oil in a large skillet over medium-high heat until shimmering. Add half the beef strips in a single layer and sear for 1-2 minutes per side until browned but not cooked through. Remove and set aside. Repeat with remaining beef and oil if needed.
  4. In the same pan, reduce heat to medium. Add remaining oil, sauté onions until translucent (about 3 minutes). Add garlic and cook for 30 seconds until fragrant. Add mushrooms and cook until browned and liquid evaporates (5-7 minutes).
  5. Pour in beef broth and stir in Dijon mustard. Bring to a gentle simmer and reduce slightly for 3-4 minutes. Lower heat to medium-low, stir in sour cream until smooth, avoiding boiling to prevent curdling. Season with salt and pepper.
  6. Return seared beef to the pan and warm through gently for 2-3 minutes to finish cooking and absorb sauce.
  7. In a separate large skillet, melt butter over medium heat. Add minced garlic and sauté for 30 seconds. Add cauliflower rice, season with salt and pepper, and cook, stirring occasionally, until tender but not mushy (6-8 minutes). Stir in fresh herbs if using.
  8. Serve cauliflower rice topped with creamy keto beef stroganoff. Garnish with fresh parsley and enjoy immediately.

Notes

Pat beef dry to ensure a good sear and avoid overcrowding the pan to prevent steaming. Add sour cream off heat or on very low heat to prevent curdling. Stir cauliflower rice often to avoid burning and keep it fluffy. Use full-fat sour cream for best texture.
