  • 4 cups russet potatoes, peeled and diced
  • 1 cup chopped yellow onion
  • 1 cup diced carrots
  • 1 cup diced celery
  • 4 cups chicken broth
  • 2 cups whole milk
  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Optional garnishes: fresh parsley, shredded cheese, crumbled bacon

Instructions

  1. Peel and dice the potatoes, chop the carrots, celery, and onion, and set them aside.
  2. In a large pot, melt the butter over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are softened, about 5-7 minutes.
  3. Sprinkle the flour over the sautéed vegetables and stir well to coat. Cook for another 2 minutes to eliminate the raw flour taste.
  4. Gradually add the chicken broth, stirring constantly to dissolve the flour and prevent lumps. Bring the mixture to a simmer.
  5. Add the diced potatoes and ham to the pot. Season with salt and pepper to taste. Cover and simmer for 15-20 minutes, or until the potatoes are tender.
  6. Reduce the heat to low and stir in the milk and heavy cream. Let the soup warm through, but avoid boiling to prevent the dairy from curdling.
  7. Taste and adjust seasonings as needed. If the soup is too thick, add a splash of broth or milk to thin it out.
  8. Serve hot, garnished with parsley, shredded cheese, or crumbled bacon if desired.

Notes

Dice vegetables evenly for consistent cooking. Avoid boiling after adding dairy to prevent curdling. Adjust thickness by adding more broth or milk if needed.
