  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds or 700g)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 3/4 cup chicken broth (180 ml)
  • 1 cup heavy cream (240 ml)
  • 3/4 cup freshly grated parmesan cheese (about 75g)
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Pat dry the chicken thighs with paper towels. Season generously with salt and pepper on both sides. Let sit at room temperature for 10 minutes.
  2. Heat a large skillet over medium-high heat and add olive oil. Once shimmering, place chicken thighs skin-side down. Cook for 7-9 minutes without moving to form a golden crust.
  3. Flip the chicken and cook for another 5-7 minutes until almost cooked through (internal temperature around 155°F). Remove chicken from skillet and set aside.
  4. Reduce heat to medium-low. Add butter to the skillet and melt. Add minced garlic and sauté for 30-45 seconds until fragrant, avoiding browning.
  5. Pour in chicken broth and scrape up browned bits from the pan. Simmer for 2-3 minutes to reduce slightly.
  6. Stir in heavy cream and bring to a gentle simmer. Gradually whisk in parmesan cheese until melted and smooth. Add dried Italian herbs and stir to combine.
  7. Return chicken thighs to skillet, skin-side up. Spoon sauce over the top. Cover loosely and simmer gently for 5-7 minutes until chicken reaches 165°F and sauce thickens.
  8. Sprinkle chopped parsley on top and serve immediately.

Notes

Pat chicken skin dry for best crispiness. Avoid overcrowding the pan to ensure even browning. Use fresh parmesan cheese for better melting and flavor. If sauce thickens too much, add a splash of broth or cream to loosen. Let chicken rest 5 minutes before serving to retain juiciness.
