  • 1/2 cup pitted and chopped green olives (e.g., Castelvetrano)
  • 1/4 cup Greek yogurt (full-fat or low-fat)
  • 1 small clove garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • Freshly ground black pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional garnish)

Instructions

  1. Add the feta cheese, Greek yogurt, garlic, olive oil, and lemon juice to a food processor.
  2. Pulse the mixture until smooth and creamy, about 1-2 minutes. If too thick, add a drizzle of olive oil or a teaspoon of water to loosen it.
  3. Add the chopped green olives and pulse again until incorporated, leaving small olive pieces for texture.
  4. Taste and adjust seasoning with freshly ground black pepper. Additional salt may not be necessary due to the saltiness of the feta and olives.
  5. Scoop the spread into a serving bowl and smooth out the top with a spatula.
  6. Garnish with chopped parsley or a drizzle of olive oil for presentation.
  7. Serve immediately with crackers, pita bread, or fresh vegetables.

Use high-quality feta for the best flavor. Fresh lemon juice and garlic enhance the taste. Pulse gently to maintain texture. Serve at room temperature for optimal flavor.
