Creamy Caprese Stuffed Avocados Recipe Easy Perfect Balsamic Drizzle

A quick and easy snack or light meal featuring ripe avocados stuffed with a creamy Caprese filling and topped with a sweet balsamic reduction. Fresh, luscious, and satisfying with a perfect balance of creamy, tangy, and sweet flavors.

  • 2 ripe but firm avocados
  • 4 oz (about 115g) fresh mozzarella balls or pearls
  • 1 cup (150g) cherry tomatoes, halved
  • 1012 fresh basil leaves, torn or chopped
  • 1 tablespoon extra virgin olive oil
  • 1 small clove garlic, minced (optional)
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey or maple syrup
  • Salt to taste
  • Freshly cracked black pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Pour 2 tablespoons of balsamic vinegar into a small saucepan over medium heat. Add 1 teaspoon of honey or maple syrup. Simmer gently, stirring occasionally, until thickened and coats the back of a spoon, about 5-7 minutes. Remove from heat and let cool.
  2. In a small bowl, tear or chop the fresh mozzarella into bite-sized pieces. Add halved cherry tomatoes, torn basil leaves, minced garlic (if using), 1 tablespoon olive oil, salt, and freshly cracked black pepper. Stir gently to combine.
  3. Cut each avocado in half lengthwise. Remove pits and scoop out about 1 tablespoon of flesh from each half to create a hollow for the filling. Optionally reserve scooped flesh to mix into the filling for extra creaminess.
  4. Spoon the Caprese mixture evenly into each avocado half, gently pressing to fill the hollow without overfilling.
  5. Drizzle the cooled balsamic reduction over the stuffed avocados just before serving.
  6. Optionally sprinkle a pinch of red pepper flakes for a subtle heat kick. Serve immediately.

Notes

Use slightly underripe avocados to hold the filling better. Reduce balsamic vinegar gently to avoid burning. Mix filling gently to avoid watery texture. Prepare filling ahead but stuff avocados just before serving to prevent browning. A squeeze of lemon juice on avocado halves helps keep them fresh.
