A quick and easy creamy buffalo chicken dip with tangy blue cheese, perfect for parties and impromptu gatherings. This dip balances spicy heat with creamy richness and is a crowd-pleaser.

Ingredients

Scale
  • 2 cups cooked shredded chicken (about 300g)
  • 8 oz cream cheese, softened (225g)
  • ½ cup buffalo hot sauce (120ml), recommended Frank’s RedHot
  • ½ cup blue cheese crumbles (75g)
  • ½ cup sour cream (120ml)
  • 1 cup shredded cheddar cheese (100g)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • Black pepper to taste
  • Fresh chives or green onions, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the softened cream cheese and sour cream. Blend until smooth and creamy, about 2-3 minutes. If cream cheese isn’t softened, microwave in 10-second bursts until pliable.
  3. Add buffalo hot sauce, garlic powder, onion powder, and black pepper. Stir gently to combine.
  4. Fold in shredded chicken, cheddar cheese, and blue cheese crumbles. Mix just enough to combine.
  5. Transfer the mixture to a baking dish or oven-safe skillet and spread evenly.
  6. Bake for 20-25 minutes until edges are bubbly and top is slightly golden.
  7. Remove from oven and let cool for 5 minutes to thicken.
  8. Garnish with chopped chives or green onions before serving.

Notes

Use room temperature cream cheese for smooth mixing. Avoid overmixing cheeses to prevent grainy texture. For dairy-free, substitute sour cream with coconut yogurt and blue cheese with a dairy-free alternative. Can be made in a slow cooker on low for 1-2 hours. Serve with celery sticks, tortilla chips, or sliced baguette. Store leftovers in an airtight container in the fridge for up to 3 days.
