  • 6 slices bacon, cooked crispy and crumbled
  • 16-ounce package potato gnocchi
  • 2 cups sharp cheddar cheese, shredded
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or chives

Instructions

  1. Cook the bacon in a frying pan over medium heat until crispy. Transfer to a plate lined with paper towels and crumble once cooled.
  2. In a large soup pot, melt the butter over medium heat. Add the diced onion and cook until softened, about 3 minutes.
  3. Stir in the minced garlic and cook for another minute, just until fragrant.
  4. Sprinkle the flour over the onion mixture, stirring constantly to create a roux. Cook for 1-2 minutes to remove the raw flour taste.
  5. Gradually whisk in the chicken broth, ensuring no lumps form. Bring the mixture to a gentle simmer.
  6. Add the gnocchi to the pot and cook for 5 minutes, or until they float to the surface and become tender.
  7. Reduce the heat to low and stir in the heavy cream, shredded cheddar, and crumbled bacon. Stir until the cheese is fully melted and the soup is creamy.
  8. Season with salt and pepper to taste. If the soup feels too thick, add a splash of broth to adjust the consistency.
  9. Ladle into bowls and garnish with parsley or chives, if desired.

Notes

Cook the flour properly to avoid a raw taste. Use freshly shredded cheese for better melting. Add gnocchi only after the broth has reached a simmer for even cooking.
