  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup (170g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¾ cup (165g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups (270g) shamrock mint chocolate chips
  • Optional: ½ teaspoon peppermint extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  4. Beat in the eggs one at a time, then mix in the vanilla extract and optional peppermint extract.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding with a spatula until just combined.
  6. Gently fold in the shamrock mint chocolate chips.
  7. Drop dough balls about 2 inches apart on the prepared baking sheets using a cookie scoop or tablespoon.
  8. Bake for 10-12 minutes, until edges are golden but centers look slightly underbaked.
  9. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Use softened butter, not melted, for best texture. Store cookies in an airtight container with a slice of bread to keep them soft longer. Watch baking time carefully to avoid overbaking.
