  • 1/3 cup unsalted butter, cold and cubed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced pears, grated fresh ginger, brown sugar, lemon juice, vanilla extract, cornstarch, and cinnamon. Toss gently but thoroughly to coat all slices.
  3. Transfer the pear mixture to a greased 9×9-inch baking dish, spreading evenly in a single layer.
  4. In a separate bowl, mix the rolled oats, flour, brown sugar, ground ginger, and salt.
  5. Add the cold, cubed butter to the oat mixture and use a pastry cutter or fingertips to mix until the mixture resembles coarse crumbs with some pea-sized bits of butter remaining.
  6. Optional: Stir in chopped nuts for extra texture.
  7. Sprinkle the oat topping evenly over the pear filling without pressing down.
  8. Bake for 40–45 minutes, or until the topping is golden brown and the filling is bubbling around the edges.
  9. If the topping browns too quickly, loosely tent the cobbler with foil halfway through baking.
  10. Cool slightly for 10–15 minutes before serving to allow juices to thicken.
