These cozy mini Philly cheesesteak sliders combine thinly sliced ribeye steak, caramelized onions, and melted provolone cheese on soft slider buns for ultimate comfort food. Perfect for quick weeknight dinners, potlucks, or game-day snacks.

  • 1 lb ribeye steak, thinly sliced
  • 12 slider buns, soft and slightly sweet
  • 1 large yellow onion, thinly sliced
  • 1 green bell pepper, thinly sliced (optional)
  • 8 oz provolone cheese, sliced
  • 2 tablespoons vegetable oil or olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika (optional)
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon dried parsley flakes

Instructions

  1. Prep the steak and veggies by thinly slicing the ribeye steak against the grain, and slicing the onion and green pepper thinly.
  2. Heat 1 tablespoon of oil in a skillet over medium heat. Add onions and peppers with a pinch of salt. Stir occasionally until soft and caramelized, about 10-12 minutes.
  3. Push veggies to one side, add remaining oil, increase heat to medium-high. Add steak in a single layer, season with salt, pepper, garlic powder, and smoked paprika. Cook 2-3 minutes per side until browned but juicy.
  4. Preheat oven to 350°F (175°C). Slice slider buns in half horizontally. Arrange bottom halves on a baking sheet. Layer seared steak, caramelized onions and peppers, then top with provolone slices.
  5. Mix melted butter with dried parsley. Brush tops of slider buns generously. Place buns on top of cheese-covered steak. Bake 8-10 minutes until cheese melts and buns warm through. Serve immediately.

Notes

Thinly slice steak against the grain for tenderness. Caramelize onions and peppers slowly for sweetness. Do not overcrowd pan when searing steak; cook in batches if needed. Use fresh sliced cheese for better melting. Buttering buns adds richness and a golden crust. Optional to add a splash of beef broth while cooking steak for extra juiciness.
