  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup (150g) candied cherries
  • 1/2 cup (75g) raisins
  • 1 cup (120g) chopped nuts (walnuts or pecans)
  • Optional: 1 teaspoon rum or orange extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Beat in eggs, one at a time, and vanilla extract. If using rum or orange extract, add it now.
  4. In a separate bowl, whisk together all-purpose flour, baking powder, ground cinnamon, ground nutmeg, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Gently stir in candied cherries, raisins, and chopped nuts.
  7. Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 12-15 minutes, or until the edges are lightly golden. The centers will look slightly soft but will firm up as they cool.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a cooling rack.
