Cozy Cinnamon Roll Cake Recipe Easy Homemade with Cream Cheese Frosting

A simple and comforting cinnamon roll cake with swirls of cinnamon sugar baked right into the batter, topped with silky cream cheese frosting. Perfect for cozy mornings, brunch, or holiday treats.

  • 1 cup (200g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) buttermilk, room temperature (or whole milk with 1 tablespoon lemon juice as a substitute)
  • 2 large eggs, room temperature
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ½ cup (100g) brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 3 tablespoons unsalted butter, melted
  • 4 ounces (115g) cream cheese, softened
  • 4 tablespoons (57g) unsalted butter, softened
  • 1 to cups (120-180g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan well with butter and dust with flour.
  2. In a large bowl, whisk together flour, granulated sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold with a rubber spatula until just combined; batter should be thick but pourable.
  5. In a small bowl, mix brown sugar, cinnamon, and melted butter until crumbly and well combined.
  6. Pour half of the batter into the prepared pan and smooth the surface. Sprinkle half of the cinnamon sugar mixture evenly over the batter.
  7. Dollop the remaining batter on top and gently spread it out. Sprinkle the remaining cinnamon sugar mixture over the top.
  8. Using a butter knife or skewer, gently swirl the cinnamon sugar through the batter in a few figure-eight motions.
  9. Bake for 35-40 minutes or until a toothpick inserted in the center comes out mostly clean with a few moist crumbs.
  10. Let the cake cool in the pan for at least 15 minutes before frosting.
  11. Beat softened cream cheese and butter with an electric mixer until smooth and fluffy. Gradually add powdered sugar, mixing in vanilla extract and a pinch of salt.
  12. Spread the cream cheese frosting evenly over the cooled cake. Serve slightly chilled or at room temperature.

Notes

Do not overmix the batter to avoid a dense texture. Use room temperature buttermilk and eggs for best results. Swirl cinnamon sugar gently to create pretty ribbons. Frost cake only when slightly warm or at room temperature to prevent melting. For extra cinnamon flavor, dust cinnamon powder on frosting before serving.
