  • 8 large eggs, beaten
  • 1 cup milk (whole or 2%)
  • 2 cups shredded cheddar cheese
  • 1 pound bacon, cooked and crumbled
  • 4 cups frozen hash brown potatoes, thawed
  • 1 small onion, finely chopped
  • 1 cup diced bell peppers (red and green)
  • Salt and pepper to taste
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13 inch casserole dish with cooking spray or butter.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and crumble, then set aside. Drain excess grease from the skillet.
  3. In the same skillet, sauté the onions and bell peppers until softened. Set aside to cool slightly.
  4. Spread the thawed hash brown potatoes evenly in the bottom of the greased casserole dish.
  5. Sprinkle the crumbled bacon and sautéed veggies over the potatoes.
  6. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and paprika until well combined.
  7. Pour the egg mixture evenly over the potato, bacon, and veggie layers.
  8. Top with shredded cheddar cheese, spreading it evenly across the casserole.
  9. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the cheese is bubbling and golden.
  10. Let the casserole cool for 5 minutes before slicing and serving.
