These homemade cheddar bay biscuits are fluffy, cheesy, and flavorful, with a garlic butter glaze that makes them better than Red Lobster’s version. Perfect for cozy gatherings and quick comfort food.

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1 cup (110g) sharp cheddar cheese, shredded
  • 1 cup (240ml) cold buttermilk (or 1 cup milk + 1 tablespoon lemon juice)
  • For the garlic butter topping:
  • 4 tablespoons (60g) unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and garlic powder.
  3. Add cold, cubed butter and cut into the flour mixture using a pastry cutter or fork until mixture resembles coarse crumbs with pea-sized butter pieces.
  4. Fold in shredded cheddar cheese evenly.
  5. Pour in cold buttermilk and gently stir with a spatula until just combined; dough should be soft but not sticky.
  6. Turn dough onto a lightly floured surface and pat into a 1-inch thick rectangle.
  7. Use a floured biscuit cutter (about 2.5 inches diameter) to cut out biscuits. Press straight down without twisting. Gather scraps and cut more biscuits.
  8. Place biscuits close together on the baking sheet for tender sides or spaced apart for crispier edges.
  9. Bake for 12-15 minutes until golden brown on top and lightly browned on the bottom.
  10. While baking, melt butter for the garlic butter glaze and stir in minced garlic, dried parsley, and a pinch of salt.
  11. Brush warm biscuits generously with the garlic butter glaze as soon as they come out of the oven.
  12. Let biscuits cool for 5 minutes and serve warm.

Notes

Use cold butter for flaky layers and freshly shredded cheddar for best melt and texture. Avoid overmixing dough to prevent tough biscuits. Press biscuit cutter straight down without twisting to keep edges fluffy. Brush garlic butter immediately after baking for best flavor and shine. Dough can be refrigerated up to 24 hours before baking; add extra baking time if baking cold.
