Instructions

  1. Peel and slice 6 large ripe peaches into about 1/2-inch thick slices. Toss peaches in a bowl with 1/2 cup granulated sugar, 1/4 cup brown sugar, 1 tablespoon lemon juice, 1 teaspoon ground cinnamon, and 2 tablespoons all-purpose flour. Stir gently to coat evenly and set aside to macerate.
  2. In a large bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, 1/2 teaspoon salt, and 2 tablespoons granulated sugar. Cut in 1/2 cup cold unsalted butter using a pastry cutter or fingertips until mixture resembles coarse crumbs with pea-sized bits.
  3. Pour in 3/4 cup buttermilk or milk and 1 teaspoon vanilla extract if using. Stir gently until just combined; do not overmix.
  4. Preheat oven to 375°F (190°C). Place cast iron skillet in the oven for a few minutes to warm.
  5. Remove hot skillet and spread peach mixture evenly across the bottom. Dollop spoonfuls of biscuit dough over the peaches, covering most of the surface but leaving some gaps.
  6. Bake in the oven for 35-40 minutes until biscuit crust is golden brown and cooked through and peach filling is bubbly.
  7. Let cobbler cool slightly before serving. Serve warm with vanilla ice cream or whipped cream if desired.
