  • 12 ounces smoked sausage, sliced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium head of green cabbage, shredded or chopped
  • 2 medium carrots, peeled and sliced
  • 2 medium potatoes, diced
  • 6 cups chicken broth
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the smoked sausage and cook for 3-4 minutes until browned, stirring occasionally.
  2. Add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and softened.
  3. Stir in the paprika and cook for an additional minute to toast the spices.
  4. Add the chopped cabbage, carrots, and potatoes. Cook for 5 minutes, stirring occasionally, until the vegetables start to soften.
  5. Pour in the chicken broth and add the diced tomatoes. Bring the mixture to a boil, then reduce the heat to a simmer.
  6. Season with salt and pepper to taste. Cover and let the soup simmer for 20-25 minutes, or until the potatoes are tender.
  7. Stir occasionally and check the seasoning. Adjust if needed.
  8. Once the soup is ready, sprinkle with fresh parsley before serving.
